We had and abundance of sweet and soft butter crunch lettuce leaves in our garden that were calling to be eaten for dinner tonight. The kids absolutely love freshly sauteed salmon with a little fresh garlic and raw honey drizzled on top. So we picked some organic tomatoes and tied it together for a delicious dinner. It was so easy, so healthy, and sooooooo delicious. If you want a perfect lunch or dinner recipe ~ this is it! This recipe is so naturally savory that I do not even use a store bought “salad dressing” on top – I just drizzle the coconut oil, garlic, and herbs left from the pan right on top of the salmon. If you want to squeeze a fresh orange drizzle over it that would be fabulous too!

Ingredients
  1. fresh wild caught salmon filet: 4
  2. organic freshly picked buttercrunch lettuce leaves: 8 cups
  3. organic freshly picked sweet tomatoes: 1 cup
  4. organic freshly picked herbs: basil, oregano, lemon thyme: 1 TBS each
  5. Sea Salt & Fresh Cracked Pepper
  6. raw organic honey : 1 TBS
  7. raw diced garlic: 1 tsp
  8. homemade croutons: 1 cup
  9. shaved Parmesan aged cheese (optional) 1 TBS
  10. coconut oil 1-2 TBS
Instructions
  1. Pick and wash the lettuce leaves, spin dry, plate onto 4 plates.
  2. Pick, wash, slice the tomatoes and divide between plates.
  3. Pick, wash, and chop the herbs.
  4. Season salmon with fresh chopped herbs, salt, pepper, garlic, and honey.
  5. Place coconut oil to skillet and fillet salmon, each side a few minutes until just cooked through.
  6. Place warm salmon to bed of lettuce.
  7. Add tomatoes, homemade croutons, and a few shaving of Parmesan cheese on top.
  8. Enjoy this healthy and absolutely delicious salad!
Notes
  1. Salmon is full of healthy omega-3's, has a very low glycemic index, and one serving of salmon has more than the daily recommended vitamin B12 and vitamin D for the day! Did I mention it tastes fabulous too?
